1/2 cup diced celery 2 cloves garlic, minced 1/2 cup white wine 3/4 cup chicken broth 1 teaspoon dried thyme leaves 1 bay leaf Fresh parsley leaves, for garnish (optional) Instructions: Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown. Remove from the skillet and set aside. Add the onion, celery, garlic, white wine, chicken broth, thyme leaves, and bay leaf to the skillet. Bring to a simmer and cook for 5-7 minutes, or until the vegetables are tender.
