Ingredients: 1 lb chicken thighs, cut into small pieces 1 tablespoon olive oil 1 onion, diced 3 cloves garlic, minced 1 cup chicken stock 3 tablespoons soy sauce 2 tablespoons rice vinegar steamed rice, for serving salt and pepper, to taste Instructions: 1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and onion, and cook until the chicken is browned and the onion is softened, about 5 minutes. 2. Add the garlic and cook for another minute. 3. Add the chicken stock, soy sauce and rice vinegar.
